Teaming up with RE:FIND Distillery of Paso Robles, SLO Bitter Co. produces small batch, hand crafted cocktail bitters with a base of neutral spirits made with the highest quality reclaimed grape juice form the Central Coast of California. This unique and innovative process shows itself in rich, complex flavors sure to bring that extra spark to all your favorite libations.
SLO Bitter Co. bitters are currently featured at local restaurants and specialty stores including Fish Gaucho Restaurant, Pappy Mc Gregors, Sidecar SLO, Granada Hotel & Bistro, Novo Restaurant and Lounge, The Station SLO, Lincoln Market & Deli, and The Hatch Rotisserie and Bar . We release new flavors seasonally along with specialty cocktail recipes, so keep checking back.

Necessity being the mother of invention, SLO Bitter Co. was born of the desire to create amazing craft cocktails using only the best local, seasonal components. With more than 20 years in the service industry, founder Robin Kirk Wolf began hand crafting these small batch bitters with an focus on craft and creativity.
Through a journey that took her to New York City for over a decade, she witnessed the craft cocktail renaissance first hand. Upon her return to their hometown of SLO (San Luis Obispo, CA for the uninitiated), Robin sought a way to bring a piece of that back with her.
With her background in wine with the Court of Master Sommeliers and a jones for unique flavor pairings, Robin began making bitters as a hobby. Through the support of amazing friends and industry colleagues, SLO Bitter Co. was born. An award winning mixologist and current Cocktail Czar of The Hatch Rotisserie in Paso Robles, CA, Robin enjoys mixing up delicious libations and raising the bar (get it?) in the local Cocktail Industry.
